The odor of dried paprika is weak but the taste is very hot, sometimes less, sometimes more but always little sweet. Dried paprika is widely spread in East and is very popular in Europe and less known in Russia. Paprika is dehydrated, crushed red and green hot pepper which is called otherwise as red gold. With that, paprika is loved in South America, India, Spain and in Central Asia all cuisines can not get around without dried paprika. Pepper raises appetite, improves the gastrointestinal activity. In the same amount of the paprika and citrus fruits, paprika has more Vitamin C. Dried paprika contains: alkaloids (alkaloid a like amide), capsaicine (up to 0.7%) which causes irritation and hot taste, sugars (up to 8.4%) proteins up to (1.5 %) Vitamin C ( up to 500 mg%), carotin (14 mg%), P, B1, B2, essential (1.5%) and fatty oils (in seeds up to 10%) and steroid saponins.
