Cabbage dried

White cabbage is one of the main vegetable cultures that take more that 20% of the whole area given to vegetable growth in Uzbekistan, has large natural habitat of distribution.
White cabbage is easily dried and it keeps all of its flavor and medical qualities. Homeland of white cabbage is the Mediterranean. It has been cultivated since 3000 years B.C. There are more than 100 sorts of cabbage.
In content of protein dried cabbage is a lot higher than dried carrots, beets and turnips. The proteins of dried cabbage are very good source of essential amino acids (lysine, threonine, methionine) which are necessary for blood formation, growth and neogenesis, stimulating kidneys, adrenals, thyroid gland as well as for dissolution and excretion of foreign proteins from organism. Cabbage is praised for containing vitamin U, which cures peptic ulcer, ulcerative colitis, gastritis, sluggishness of intestines and activates liver function. Cabbage is also rich in vitamin K. It is necessary for normal metabolism, wound healing, coagulability of blood, forming bones and healthy teeth, also helps liver performance.
The content of vitamin C is also gives cabbage a high value. This vitamin can be present in the same concentration in cabbage for as long as 7-8 months. No other vegetable have such durability, only citrus fruits (orange, tangerine, and lemon) can retain as much vitamin C. Except previously mentioned cabbage has vitamins E, B1, B2, B3, P, PP, H, carotene and pro vitamin D. Cabbage has almost no starch and is low in sugar which is why it is very good for people having diabetes. Cabbage is low in calorie; hence it can be used to control obesity. It also can be used for constipation, promoting secretion of gastric juice. Cellulose of cabbage improves bowel activity that is why it is good for hemorrhoids. Besides, cellulose helps to clear the body from chemical wastes and cholesterol, which prevents atherosclerosis. Cellulose renders positive influence in developing healthy intestinal microorganisms-required element for improving digestion process. Another reason white cabbage is recommended for diabetes is, it is low in carbohydrates and contains lactic acid which extremely necessary for our organism.
White cabbage keeps its medicinal properties more when fresh and soured than cooked.
